23 Sep 2010 My new creation, Cheesy baked eggplant and bacon risotto! :) I used 3 different cheeses which were Parmesan, mozzarella and cheddar. We both loved it lots! :D I was asked to make this fantastic dish again! :)

I've made this once 4 or 5 years ago. :) This was the second time! Hubby said it was very delicious and it tasted better than last time. :D hehehe I think so too!
