Me and hubby on a Sampan

We stayed out all night with hubby's mate. We had a few drinks at a hotel bar in Kowloon and then we took a taxi to Central. Had a look around Lan Kwai Fong and Upper Pottinger Street. Wanted to go in Yumla but it was completely packed with people.

So..we decided to have a drink in his hotel room instead and it was great. :)

The Sampan ride was pretty exciting and fun. :) We even took some videos. The whole journey took about 35 mins from Aberdeen to Yung Shue Wan. Not bad!

We came home around 6am. lol Hubby bought a few freshly baked croissants from the village bakery. We had them for breakfast :P

We went to bed around 7am and slept until 5:30pm. lol I felt so tired.

Sunday Walk to Sok Kwu Wan

I asked hubby to go out for a hike again. hahaha The weather was not bad. It wasn't sunny but at least it didn't rain! So...yeah! We walked to Sok Kwu Wan very quickly this time. Had a look at the BBQ area. It looked pretty new and clean. :)

Hope the weather will be nice next Sunday. ^^ We want to go to Tung O.

Aubergine Parmigiana

Recipe from Jamie Oliver
ingredients
• 3 large firm aubergines
• olive oil
• 1 onion, peeled and finely chopped
• 1/2 a bulb of spring garlic, if you can get it, or 1 clove of regular garlic, peeled and finely sliced
• 1 heaped teaspoon dried oregano
• 2 x 400g tins good-quality plum tomatoes or 1kg fresh ripe tomatoes
• sea salt and freshly ground black pepper
• a little wine vinegar
• a large handful of fresh basil
• 4 large handfuls of freshly grated Parmesan cheese
• 2 handfuls of dried breadcrumbs
• a little fresh oregano, leaves chopped

optional:
• 1 x 150g ball of buffalo mozzarella

I asked hubby to go out for a hike since the weather was pretty good today. Blue sky and it wasn't too hot! :D Perfect for hiking. At first he didn't want to. haha But he was glad that he went!
