Sausage & Vegetable Stew

Ready to eat! It's very nice to have it with rice. :D yummy yummy

    1 medium onion, chopped
    3 cloves of garlic, minced
    1 shallot chopped
    1 big eggplant, peeled lengthwise in stripes
    lots of cherry tomatoes, chopped
    1 sausage
    2 tbsp tomato paste
    3 tbsp olive oil
    1/3 cup chicken stock
    black pepper
    basil
    paprika
    parsley

    Saute onions, garlic, shallot and eggplant with olive oil on medium heat for 15 minutes.
    -Add tomato paste, stir for 1-2 minutes.
    -Add the rest of the ingredients except parsley. Cover and cook on low for 40-45 minutes.
    -Sprinkle parley on top a minute or two before you turn it off.
